Spicy Salsa

Homemade Spicy Salsa Recipe

Cooking time: 15 minutes

Serving size: 15 servings

Ingredients

  • 5 large tomatoes
  • 2 jalapeno peppers
  • 3 cloves garlic
  • 1/3 cup cilantro
  • 1 teaspoon salt
  • 1/2 lime, juiced
  • 1 bag tortilla chips for dipping (optional)

Directions

  1. Preheat oven to 400°F.
  2. Place tomatoes, garlic, and jalapeños on a lined baking sheet. Roast for 15 minutes.
  3. Remove from the oven. Cut the tops off the jalapeños.
  4. Blend the roasted tomatoes, garlic, and jalapeños until smooth.
  5. Add chopped cilantro, lime juice, and salt to the blended mixture. Mix well and let cool.
  6. Serve this homemade spicy salsa with tortilla chips or an alternative and enjoy!

Ingredients

  • 3 cups powdered sugar
  • 1/4 teaspoon cream of tartar
  • 2 egg whites

Directions

  1. Sift powdered sugar and cream of tartar into a bowl.
  2. Beat the egg whites into the sugar mixture until it thickens. This usually takes about 5 minutes of beating until you get a smooth icing.
  3. To add some character, mix in food coloring or top with decorations if desired.
  4. Ice sugar cookies with the cookie icing and enjoy!

This Ground Cherry Upside Down Cake recipe was originally published in the Fall 2019 edition of the “Weekend Gardner” Magazine.

Prep time: 20 minutes

Cooking time: 35 minutes

Serving size: 8 servings

Ingredients

  • 1 1/2 cups ground cherries, husked and washed
  • 12 tablespoons butter, divided
  • 1 cup light brown sugar, packed
  • 1/4 cup dark rum
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1 large egg

Directions

  1. Preheat oven to 400°F.
  2. Over low heat, melt 4 tablespoons of butter in a small saucepan and whisk in the brown sugar until combined.
  3. Carefully whisk in the rum and continue cooking for 3-4 minutes. The sugar may not completely dissolve, but that is okay.
  4. Remove from heat and pour this sugar mixture into the bottom of a 9-inch cake pan (do not grease).
  5. Arrange the husked cherries in a single layer over the sugar mixture. Set aside.
  6. Over low heat, melt the remaining 8 tablespoons of butter.
  7. In a small bowl, whisk the egg with the milk, and slowly add in the melted butter, whisking to combine.
  8. Sift together the flour, baking powder, salt, and granulated sugar in a medium bowl and set aside.
  9. Add the milk mixture to the dry ingredients, stirring until combined. Do not overmix.
  10. Pour the batter evenly over the cherries and smooth to the edges with a spatula.
  11. Bake the cake for 35 minutes at 400°F or until a toothpick comes out clean
  12. Let the cake rest for ten minutes.
  13. Once cooled, place a large plate over the cake pan and carefully invert the cake onto the plate.
  14. Let it cool for an additional 20 minutes before serving.
  15. Top the Ground Cherry Upside Down Cake with whipped cream (if desired) and enjoy!

Elvis Presley, the “King of Rock and Roll,” is one of the most influential and notable cultural figures of the 20th century. He began his music career in 1954 with Sun Records in Memphis, Tennessee. Beyond his successful music career, Elvis married Priscilla Beaulieu, and they had a daughter, Lisa Marie Presley. Elvis and Priscilla split in 1973 after six years of marriage, following multiple alleged affairs. This failed marriage left Presley disheveled, and he never seemed to fully recover. In 1977, his fiancée Ginger Alden found him unresponsive, and he was pronounced dead at 42 years old. If alive today, Elvis would be 89 years old.

Jimi Hendrix (81 years old)

Jimi Hendrix, born Johnny Allen Hendrix in November 1942, is one of the most influential eclectic guitarists. His girlfriend, Monika Dannemann, a German figure skater, was with him in London on the day he passed away. Disputes surround his last day and death, but on September 18th, 1970, at the age of 27, he died from asphyxia. In 1992, The Jimi Hendrix Experience entered the Rock and Roll Hall of Fame. Although his mainstream career only lasted four years, he became a widely influential musician. If alive today, Hendrix would be 81 years old.

Prince (66 years old)

However, in April 2016, Prince died at the age of 57 due to an accidental fentanyl overdose in his Paisley Park home. If Prince were alive today, he would be 66 years old.”

Michael Jackson (65 years old)

Kurt Cobain (57 years old)

Lead vocalist, guitarist, songwriter, and founding member of Nirvana, Kurt Cobain, passed away at only 27 years old. In March 1994, Cobain overdosed and was subsequently sent to a detox program. However, less than a month later, Cobain died of a self-inflicted injury. If he were still alive today, Cobain would be 57 years old.

Amy Winehouse (40 years old)

Amy Winehouse, an English singer and songwriter, was born in September 1983. Winehouse was a National Youth Jazz Orchestra member in her youth and eventually signed with Simon Fuller’s 19 Management in 2002. Jazz music heavily influenced her 2003 album, Frank. Winehouse battled with mental health, substance abuse, and addiction, subsequently passing away from alcohol poisoning in July 2011 at 27. If Amy Winehouse were alive today, she would be 40 years old.
