Ingredients

2 large cucumbers (English or Persian), thinly sliced

¼ small red onion, very thinly sliced

2 tbsp fresh dill, chopped (or parsley)

3 tbsp rice vinegar (or white wine vinegar)

1 tbsp olive oil

1–2 tsp honey (to taste)

½ tsp salt

¼ tsp freshly ground black pepper

Optional: sesame seeds
Instructions
1. Slice the cucumbers2. Salt and restToss cucumbers with a pinch of salt and let sit 10–15 minutes. Drain excess liquid for a crisper salad.
3. Make the dressingWhisk together vinegar, olive oil, honey, salt, and pepper until balanced (taste and adjust sweetness or acidity).
4. TossAdd cucumbers, red onion, and dill to a bowl. Pour dressing over and toss gently.
5. ChillRefrigerate for at least 20 minutes before serving to let flavors meld.
6. EnjoyFinish with extra dill, cracked pepper, sesame seeds (if using) and enjoy!
