Ingredients
- 1 (15 oz) can chickpeas, drained and rinsed
- 1 cup roasted red peppers (jarred or homemade)
- 1/4 cup tahini
- 2–3 tablespoons lemon juice (fresh is best)
- 1–2 cloves garlic
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt (adjust to taste)
- 2–4 tablespoons water (to thin, as needed)
Instructions
1. Blend base ingredients
Add the chickpeas, roasted red peppers, tahini, lemon juice, garlic, olive oil, cumin, and salt to a food processor.
2. Process until smooth
Blend the mixture for 1–2 minutes until creamy, scraping down the sides as needed.
3. Adjust texture
Add water a little at a time and blend until you reach your desired consistency.
4. Taste & tweak
Adjust salt, lemon juice, or garlic to your preference.
5. Serve
Transfer to a bowl, drizzle with olive oil, and optionally top with paprika, parsley, or extra chopped peppers.
