Ingredients
For the Lobster Filling
- 1 1/2 pounds cooked lobster meat, chopped into bite-sized pieces
- 1/4 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon finely chopped chives
- 1 tablespoon finely chopped celery
- 1/2 teaspoon Old Bay seasoning
- Salt and black pepper, to taste
For the Rolls
- 4 New England-style split-top hot dog buns
- 2 tablespoons unsalted butter, melted
- Lettuce leaves (optional)
- Extra chives and lemon wedges, for serving
Instructions
1. Prepare the Dressing
In a large bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, chives, celery, and Old Bay seasoning until smooth and well combined.
2. Mix the Lobster Filling
Gently fold the chopped lobster meat into the dressing until evenly coated. Season with salt and pepper to taste. Refrigerate while preparing the buns.
3. Toast the Rolls
Brush the outsides of the split-top buns with melted butter. Heat a skillet or griddle over medium heat and toast the buns until golden brown and crisp on both sides, about 2–3 minutes per side.
4. Assemble the Lobster Rolls
If desired, line each bun with a lettuce leaf. Divide the lobster mixture evenly among the toasted buns, generously filling each roll.
5. Serve
Garnish with extra chives and serve immediately with lemon wedges on the side.
