Ingredients
For the Blueberry Filling
- 6 cups fresh blueberries
- ¾ cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp cornstarch
- ½ tsp ground cinnamon
- ¼ tsp salt
For the Cobbler Topping
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- ¼ tsp salt
- 1 cup milk
- ½ cup (1 stick) unsalted butter, melted
Instructions
1. Prepare the Blueberries
Combine the blueberries, sugar, lemon juice, lemon zest, cornstarch, cinnamon, and salt in a large bowl until the berries are evenly coated.
2. Simmer the Filling
Transfer the blueberry mixture to a saucepan and cook over medium heat for 5–7 minutes, stirring gently, until the juices begin to thicken.
3. Add the Butter
Pour the melted butter into a 9×13-inch baking dish, making sure it covers the bottom evenly.
4. Mix the Batter
Whisk together the flour, sugar, baking powder, salt, and milk in a mixing bowl until smooth and lump-free.
5. Assemble the Cobbler
Pour the batter over the melted butter without stirring, then spoon the blueberry mixture evenly over the batter.
6. Bake Until Golden
Bake at 350°F for 40–45 minutes, or until the topping is golden brown and the blueberry filling is bubbling around the edges.
7. Cool and Serve
Let the cobbler rest for 10–15 minutes before serving to allow the filling to set. Top with whipped cream or ice cream and enjoy!
