Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 4 large flour tortillas
- 1 cup cooked white rice
- 1 cup refried beans
- ½ cup nacho cheese sauce
- 1 cup shredded Mexican-blend cheese
- ½ cup sour cream
- ½ cup diced tomatoes
- ¼ cup diced onions
- 2 tablespoons butter
- ½ teaspoon garlic powder
- tortilla strips (optional)
- Salt and pepper, to taste
Instructions
1. Cook the Beef
Brown the ground beef in a skillet over medium-high heat. Drain any excess grease, then stir in the taco seasoning and the amount of water called for on the packet. Simmer until thickened.
2. Warm the Fillings
Heat the refried beans, cooked rice and nacho cheese separately until warm and easy to spread.
3. Build the Burritos
Lay each tortilla flat and spread a layer of refried beans in the center. Add seasoned beef, rice, nacho cheese, sour cream, tomatoes, onions and shredded cheese. Add some tortilla strips if desired for extra crunch.
4. Fold the Burritos
Fold the sides of each tortilla toward the center, then tightly roll from the bottom to create a sealed burrito.
5. Add the Grilled Cheese Layer
Melt butter in a large skillet over medium heat. Place the burritos seam-side down and cook until golden brown. Flip and crisp the other side.
6. Make Them Extra Cheesy
Sprinkle shredded cheese over the top of each burrito and carefully flip it cheese-side down into the skillet. Cook until the cheese melts and becomes crispy and golden. Flip back over and serve hot.
