Ingredients
- 1 lb fresh or frozen squid (cleaned, cut into rings)
- 1 cup all-purpose flour
- ½ cup cornstarch (for extra crispiness)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp garlic powder
- 1 cup buttermilk (or regular milk)
- Vegetable oil (for frying)
- Lemon wedges (for serving)
Instructions
1. Prep the squid
If using frozen squid, thaw completely and pat dry. Cut into rings about ½ inch thick.
2. Soak
Place the squid in buttermilk for 20–30 minutes. This tenderizes it and helps coating stick.
3. Mix coating
In a bowl, combine flour, cornstarch, salt, pepper, paprika, and garlic powder.
4. Heat oil
Heat oil in a deep pan to about 350°F.
5. Dredge and fry
Remove squid from buttermilk, dredge in flour mixture, and shake off excess. Fry in small batches for 2–3 minutes until golden and crispy.
6. Drain and serve
Remove and drain on paper towels. Serve immediately with lemon wedges.
